🍋 Lemon Basil Oleo Saccharum Syrup

Ingredients

You will need:

  • 4 lemon peels (avoid white pith)
  • ½ cup organic cane sugar
  • 6–8 fresh basil leaves, gently torn
  • Small pinch of fine sea salt

Instructions

  1. Use a peeler to remove wide strips of lemon zest, avoiding the bitter white pith
  2. Combine peels and sugar in a covered container
  3. Shake and muddle until the sugar becomes damp and fragrant from released citrus oils
  4. Gently fold in basil leaves
  5. Cover and let sit at room temperature for 4–6 hours or overnight until the sugar liquifies
  6. Transfer to a saucepan, add equal parts water, and heat on medium (do not boil)
  7. Once dissolved, strain out solids, pressing firmly through a fine mesh strainer
  8. Refrigerate (keeps up to 10 days)
