🍋 Lemon Basil Oleo Saccharum Syrup

Ingredients
You will need:
- 4 lemon peels (avoid white pith)
- ½ cup organic cane sugar
- 6–8 fresh basil leaves, gently torn
- Small pinch of fine sea salt
Instructions
- Use a peeler to remove wide strips of lemon zest, avoiding the bitter white pith
- Combine peels and sugar in a covered container
- Shake and muddle until the sugar becomes damp and fragrant from released citrus oils
- Gently fold in basil leaves
- Cover and let sit at room temperature for 4–6 hours or overnight until the sugar liquifies
- Transfer to a saucepan, add equal parts water, and heat on medium (do not boil)
- Once dissolved, strain out solids, pressing firmly through a fine mesh strainer
- Refrigerate (keeps up to 10 days)
